FRUIT: Cherry, blood orange, raspberry coulis.
EARTH: Leather, sage, green olive tapenade.

Palate

Fruitcake, ripe red and black fruits, baking spices. 

Food Pairing

Rack of lamb, grilled meats, braised short ribs, eggplant lasagna, sheep cheese.

Aging

Aged in new and used French oak puncheons for 24 months.
